The jewel in the Carlo Pellegrino crown are the dessert wines from the islan of Pantelleria, a volcanic outcrop of black lava rock situated off the Tunisian coast which forms Italy's southernmost DOC.region.
Over 300 growers are contracted to supply Pellegrino with premium quality Zibibbo (Moscato) grapes.
Quality is guaranteed through strict prunning and the growers harvest below 30 hectolitres per hectare as part of the contract.
The fruit is soft pressedand cool fermented to capture the wondewrful freshness of the Zibibbo.
The wine has all the intensity and fruit aroma of the grape and the natural sweetnessis balanced with good acidity. The wine is made with about 20% sundried grapes added to the must, resulting in an elegant and complex wine, delicious poured over ice cream.
